Serves: 4 – cooking time: 25 minutes

Pancake batter

110g of plain flour

1 pinch of salt

200ml of milk

75ml of water

50g of butter

2 eggs

In a large mixing bowl, mix together the flour and salt. Make a well in the middle of the flour and crack the eggs into it. Whisk together, gradually adding the milk and water until you’re left with a smooth batter.

Over a medium heat, add a small knob of butter to a frying pan. Pour in enough batter to coat the base of the pan, and cook until your pancake is golden underneath. Flip over to cook the other side.

Once cooked, remove the pancake from the pan and repeat the process until all the batter is used up.

Serve the pancakes immediately, sprinkled with caster sugar and a good squeeze of lemon juice.
